Mmmmmm.....warm Bannana Nut Bread! Is there anything better?
Well, for me it would be to take the nuts out!
Yes, I like my Banana Nut Bread, nut free!
A few weeks ago I ran across this recipe, from Nags over at Edible Garden, on Pinterest. It was love at first site! Instead of the traditional pecans, she used macadamia nuts! HELLO! She also used hazelnuts but I forgot about those once I saw macadamia nuts. Since I had a few overly ripe bananas just lying around I decided to whip this up.
You will need:
Eggs
Vanilla
1 Banana (yes, just one!)
Butter
Flour
Sugar
That's it! Oh, and nuts for those of you that prefer nuts in your Banana Nut Bread. Super simple!
I started by mashing my banana and setting it aside.
Then you will cream your sugar and butter together
Add your eggs and incorporate well
Once your eggs have been incorporate turn your mixer to low/stir and add your bananas and vanilla
Mix well then add your flour, still on the lowest possible setting
You can also fold your flour in rather than mixing (this is what Nags says to do)
Lightly spray your baking dish (I used a loaf pan liner and lightly sprayed it), fill with batter and bake
Allow to cool.
My husband, who HATES banana's BTW, LOVED the bread. It is VERY good and I will be making this again soon.
