#ad Mini Ground Chicken Meatloaf | Recipe

Meatloaf, to me is the #1 comfort food. I decided to put a twist on it and make it with ground chicken this time. Oooh Meatloaf. Every time I make meatloaf I always think of the very first time I made it. I know I have shared that story before, but it has been a long time. I had just moved into a larger apartment, Hubby (who was Boyfriend at the time) was coming over and I wanted to make him one of my childhood favorites. Meatloaf. I was SO excited to be sharing this meal and the memories associated with it, with him. I got everything gathered together to get started on the meal. I prepped the peppers and onions, browned the meat, mixed up the sauce......wait something wasn't right. I was confused at what step I missed and asked Hubby to come in the kitchen to see if he knew where I went wrong. I just didn't understand how everything was supposed to stay together. "I keep trying to form it into a loaf and it keeps falling apart. What in the world?" I asked. 

Back to School with Champions for Kids Simple Giving

  I know a lot of you have started school already, and I also know a lot of you have not just yet. We have not. We are now counting down the days, not weeks. I don't know about you guys, but school supply shopping is a daunting task. The supply lists are a mile long. Then there are the "extras" that nobody tells you about, like after school snacks. We are fortunate that we can provide snacks for our girls. Many in our community are not as fortunate. There are many children in not only my community, but yours as well, that will come home from school and not eat again until they return the next day. It is a passion of mine to help these kids every year, not just at the beginning of the school year, but throughout. This year, my friends over at Champions for Kids have teamed up with Walmart to make it SUPER easy to donate to those in need in our area. Pre-K Prep | Snacktime with Lunchables Jr.

   I can't believe my baby starts school this year! I have been dreading this day all summer. School starts next week and my heart is already racing and breaking into a million pieces. Even now, as I write this, I am crying. I am going to miss my little stinker! Part of being a mom is training your kids to be able to survive in school. We learned when Mads was in 4K that the kids must be able to open their own packages during lunchtime and snacktime. So, off to Walmart MG and I went to search for some snacks for her to practice with. We settled on some Lunchables Jr . Lunchables Jr. is exclusive to Walmart and can be found with the Baby Food. They come in 4 varieties: Blueberry Bonanza, Very Berry Crunch, Ants on a Log and Teddy Bear Picnic. I love that each come with real fruit, that helps get more fruit into MGs little body which is important to me. Mid-Week Menu Plan 8/21-9/3

So, I have finally figured out that I just need to have some blank days. It never fails. Something ALWAYS comes up at least one night a week and we go out. I'm totally cool with that! But, if you are expecting a totally new menu each week, you might not be. Because I shop around my menu, I have to use what we bought before it goes bad, so again this week there are menu repeats. Homemade Brown Sugar and Cinnamon Pop-Tarts

My kids go through Pop-Tarts like I have NEVER seen! I don't buy them often because they will finish off a box in ONE DAY! No, I do not let them do that, they can be sneaky little things!  lol  Another reason I don't buy them often is, I am not a fan of some of the ingredients. I have been wanting to try my hand at making a homemade version for a while now. Like most recipes I try, I was intimidated. I don't like wasting ingredients on things and then they turn out to be AWFUL.  Luckily, these were FAR from awful! The crust is VERY buttery though, but it's yummy! Next time, I will make them with half shortening and half butter to try to cut some of the butter flavor. Quick Family Meal | Verde Chicken Enchiladas

With the new school year just around the corner, and the busy summer coming to a QUICK end, it is time to start thinking about quick meals again. Our dance year has already begun, one or both girls have dance 3 nights a week. Then we have church on Sunday and most Wednesday nights. I have already started getting back into the crazy school schedule and we are still weeks away from the first day of school. I know if I don't start incorporating quick family meals now, my head will start spinning once school is added to our already busy schedule. Not only do I like quick meals , but I like easy meals! Something that will get me in and out of the kitchen in as little time as possible. I recently headed to Walmart to get our weekly groceries. While there, I noticed something new from Kraft! Kraft Recipe Makers ! I am not ashamed that some nights, I just need some extra help in the kitchen and a meal kit comes in super handy when you just don't have time to make the sauces
