Quick Family Meal | Verde Chicken Enchiladas

With the new school year just around the corner, and the busy summer coming to a QUICK end, it is time to start thinking about quick meals again. Our dance year has already begun, one or both girls have dance 3 nights a week. Then we have church on Sunday and most Wednesday nights. I have already started getting back into the crazy school schedule and we are still weeks away from the first day of school. I know if I don't start incorporating quick family meals now, my head will start spinning once school is added to our already busy schedule. Not only do I like quick meals, but I like easy meals! Something that will get me in and out of the kitchen in as little time as possible.
I recently headed to Walmart to get our weekly groceries. While there, I noticed something new from Kraft! Kraft Recipe Makers! I am not ashamed that some nights, I just need some extra help in the kitchen and a meal kit comes in super handy when you just don't have time to make the sauces yourself.
All you need to make the Verde Chicken Enchiladas, in addition to the meal starter, is 4 Cups of Cooked Shredded Chicken, 1 Cup of Cheese and 12 Corn Tortillas.
Simply add the Filling Sauce to the Shredded Chicken and stir.
Warm 12 Corn Tortillas in the microwave for about 20 seconds. While the tortillas are warming, add one packet of the Finishing Sauce to a 9x13 baking dish.
Once tortillas have warmed, spoon about 1/4 cup of chicken mix into each tortilla and roll up.
Place each filled enchilada, seam side down, into baking dish.
Cover with remaining packet of Finishing Sauce and Cheese. Bake according to package directions.

That's it! Super easy and FAST! We added a side salad to complete our meal. We can't wait to try some of the other #kraftrecipemakers varieties!

Verde Chicken Enchiladas
Ingredients
1 Box Verde Chicken Enchilada Kraft Recipe Makers
4 Cups Shredded Chicken (pre-cooked)
1 Cup Shredded Cheese
12 Corn Tortillas
Directions
Stir Filling Sauce into Shredded Chicken and set aside.
Stack 12 Corn Tortillas and wrap in damp paper towel. Heat in microwave for 20-30 seconds.
While tortillas are heating, pour one packet of Finishing Sauce into Sprayed 9x13 Baking Dish.
Once tortillas have warmed, remove from microwave and add 1/4 Cup of the Chicken Mix to each Tortilla.
Roll each filled Enchilada and place seam side down in Baking Dish.
Pour remaining packet of Finishing Sauce over Enchiladas and top with Cheese.
Bake at 350 for 20-30 minutes.

Le Cellier - Chedder Cheese Soup Recipe Review

I first talked about this soup here .   I have to admit, was not real eager to try this soup.  I can not stand the taste of beer.  PERIOD!  It doesn't take much in a recipe for me to be able to taste it.  With that being said, the soup wasn't bad.  I would try it with ginger ale next time though. Before I tell you what I thought of the soup I need to be fair and tell you about some changes I made to the recipe. First, the recipe tells you to cook the bacon just to render out the fats, not to make crispy.  I did not render out enough of the fats and in fact next time, I would cook the bacon until it IS crispy.  I don't like limp bacon, I like my bacon extra crispy. Second, I TOTALLY forgot to cook down the onions and celery before adding the flour!  Ummmm......ooops! So my bacon was limp and my veggies were crispy!  HAHA! Next, I am not on a budget to be able to purchase "Aged White Cheddar" so good ol Yellow Sharp Cheddar it was! I did NOT add one tablespoo

Strawberries and Cream Instant Oatmeal | Recipe

I don't know about you but, we go through oatmeal like that is the only thing to eat on this planet!   Seriously a TON! My youngest would eat it for every meal and snack....every day....if I let her. Yes, the little packs can be cheap (if you can find a coupon and get them on sale) but it still adds up.  I used things I already had on hand so there was no extra cost to make this.  FREE is ALWAYS good!   I tried before to make little packets to keep on hand but that was a complete fail.  I have since reworked the recipe and am happy with the results.  I decided to just keep the oatmeal in a glass container this time and scoop out what we need, when we need it.  You can also make this into packets by just scooping the desired amount into zip-top bags. {Strawberries & Cream Instant Oatmeal}   12 Servings 6 Cups Quick Cook Oats 1 1/2 Cups Oat Powder 2 Cups Powdered Milk 1 - 1 1/2 Cup Sugar 1 Cup Freeze Dried Strawberries Directions f
