Overcomer

I have debated for over a week now about this post. I have edited, wrote, deleted, wrote some more, deleted it all and started over again. Numerous times. Then, as I was listening to my 'morning song' it came to me. The right words, for right now. For today. They may not be the right words for tomorrow, they were not the right words yesterday, they are the words for today. Before I begin, this is my story, nobody asked me to share. In fact the opposite. I was asked to keep quiet. But come on, those of you that know me remotely at all, know how well I do that. As many of you know, and if you follow me on Facebook or Twitter, you have already seen my post about this, I have been a volunteer for my friend Sarah for over 5 years on her widely popular coupon/deal site. I will not say I loved every second of it. I mean come on, there were nights I was up until 3am doing matchups for Target and/or Walgreens because I was a procrastinator and waiting until the last minute. But,

Allergy Friendly Pumpkin Muffins

My friend Sarah, from Food Allergy Eats , shared a recipe for Allergy Friendly Pumpkin Muffins . You guys know I love muffins! These look so yummy, and super easy to make! They would also work well for freezer cooking. Just double the batch and freeze the extra for a later date. Then, on a super rushed morning, just pop a couple in the oven or microwave to reheat. Master Baking Mix

I have been making a Master Baking Mix for a few years now. I use it just as I would store bought baking mixes, think of the product that starts with a B and ends in quick, it comes in a yellow box with blue letters. Yep, you can totally make that homemade and cut out all the random ingredients! I usually make 4-6 batches each time I make this mix and just store it in my freezer. Master Baking Mix Ingredients 2 Cups Flour 1 tsp Baking Powder 1 tsp Sugar 1/2 tsp Salt 1/2 Cup Butter or Shortening* Directions Place all ingredients into the bowl of your stand mixer, or food processor, mix (using the whisk attachment if using a mixer). Continue to mix until the mixture resembles sand, your butter/shortening should be well incorporated. Place mix into an airtight container, or zip-top bag, and store in your freezer. *If using butter, it needs to be between firm and soft. I usually heat mine in the microwave for about 8 seconds. Counting Down with Disney Princesses

Unless you are new to this blog, you know we love ALL things Disney. Mostly the Disney Princesses , and especially Ariel. You also know that we are going to Walt Disney World soon. Yes, I know you are sick of the countdown posts. I know, I know. But, we are SUPER excited and I am just trying to spread that excitement with you, you only have to put up with them for less than a month now. 22 DAYS to be exact!  22 DAYS! Eeek!! My mind is racing just thinking about everything I STILL have to get done. I also only have 20 days to remember where I stashed some of the surprises for the girls. That one might be tricky. Orange Strawberry Banana Oatmeal Muffins | Breakfast on the Go!

Since I now have a child in 3rd grade, which is the grade they start state tests, I have been thinking about healthy breakfasts a LOT lately. We usually eat breakfast between 6:30-7:00am and then Mads usually eats lunch around 10:30am. I need something that is going to help tide her over until then. This is especially important once the testing begins. A good, healthy, breakfast is so VERY important during this time, it helps the kids stay focused on the task at hand. I try to find recipes that are either high in protein, or fiber. These Orange Strawberry Banana Muffins using Quaker Oats are perfect, especially when paired with a glass of Tropicana Orange Juice . Countdown to Disney with The Little Mermaid

 If you have been following this blog very long, you know we are HUGE Disney fans. But not just Disney, Disney Princesses to be exact. If you ask either of my girls who their favorite Disney Princess is, they will reply with an excited "Ariel". Two years ago, on our very first trip to Walt Disney World, Madison received the Royal Princess Makeover. She was able to be transformed by the wonderful Fairy Godmother's of the Bibbidi Bobbidi Boutique into any Disney Princess of her choice. She chose Princess Ariel, The Little Mermaid. Caramel Apple Cider Cupcakes and Red Hot Apple Cider Fall Recipes

You guys! I am SO excited Fall is knocking at our doors! The cool, crisp air, the yummy fall recipes, the general smell of fall. To me, fall smells like pumpkins, leaves and hot apple cider! I couldn't wait any longer and just HAD to start on my fall baking a little early this year. When we go on vacation in the fall, we like to get a "fancy" caramel apple. You know the ones! They are covered in caramel, chocolate, M&M's, cookies, nuts. You name it, they will put it on them! I wanted to duplicate that at home, but with a cupcake! I used a Caramel Apple cake mix, Caramel Frosting, and topped with m&m's! Super easy and SO yummy!   Caramel Apple Cider Cupcakes Ingredients 1 box Apple Caramel Cake Mix 3 Eggs 1/3 C Oil 1/2 C Apple Cider (recipe below) M&M's Directions Heat oven to 350 degrees.
